Baked Chicken Leg

Ingredients:
1 chicken leg
1 clove of garlic, chopped
A pinch of salt, black pepper, cumin, oregano, chili flakes.
1 tbsp of olive oil
1/4 cup of chicken stock

Steps:
1. Preheat oven at 200 degree C.
2. Clean the chicken and pat dry.
3. Mix olive oil, garlic, salt, pepper, cumin, oregano, chili flakes in a small bowl.
4. Pat and spread the mixture over the chicken leg. Place the chicken in a baking tray and add in the stock.
5. Bake for 40 minutes.

Done! now you are ready to serve...

Baked Frittata

Ingredients:
2 slices of chicken ham, cut
Some mushrooms, cut
6 tbsp of shredded cheddar cheese
3 eggs (whole)
2 egg whites
1 tbsp of milk (can be replaced with soy milk)
Minced chives
A pinch of salt and pepper

Steps:
1. Preheat oven at 180 degree C.
2. Place cut ham and mushroom evenly into 6 muffin tins. Sprinkle 1 tbsp of cheese into each muffin tins and set aside.
2. Beat eggs in a bowl and add in the remaining ingredients. Pour the egg mixture into each muffin tin till 3/4 full.
3. Bake for 25 minutes.

Coffee Panna Cotta

Ingredients:
1/4 cup of milk
1 tsp of gelatin
3/4 cup of whipping cream
1 tsp of coffee powder
1/8 cup of sugar

Steps:
1. Soak gelatin in milk for 3 minutes and bring the mixture to low heat till gelatin dissolves.
2. Add in the remaining ingredients and stir over medium heat till sugar dissolves. Remove from heat and cool it down for 5 minutes.
3. Pour into silicon mold or ramekins and refrigerate for 4 hours or overnight.

Done! now you are ready to serve...

Tiramisu Cups

Ingredients:
Thin layer (1-2cm) of sponge cake (coffee flavored)
1 block of Philadelphia cream cheese
1/3 cup of sugar
1 cup of whipping cream
2 tbsp of coffee liqueur (Tia Maria or Kahlua)
Coffee
Cocoa powder

Steps:
1. Beat cream cheese with sugar in a large bowl till smooth. Stir in whipped cream and liqueur. Put in a piping bag and set aside.
2. Place a thin layer of sponge cake into a cup, spray some coffee on the layer surface, and pipe in a thin layer (same thickness as the sponge) of cream cheese mixture on top of it. Repeat this step for second layer. Chill for 4 hours or overnight.
3. Dust with cocoa powder before serving.

Done! now you are ready to serve...


You can also make in a square piece too...

Scones

Ingredients:
1 cup of whipping cream
1 cup of lemonade
3 cups of self raising flour, sieved

Steps:
1. Preheat oven at 200 degree C.
2. Mix whipping cream and lemonade in a bowl, set aside.
2. Place the sieved flour in a separate bowl, add in slowly the lemonade mixture and fold well. Add in currents or sultanas as you wish.
3. Spoon the dough onto a baking tray, about 3 cm thick. Bake for 12 minutes or until pale golden.
4. Serve with strawberry jam and whipped cream.

Pavlova

Ingredients:
2 egg whites
110g of castor sugar
1/2 tsp of vinegar
120g of fresh whipping cream
Fresh fruits (strawberries, kiwi and etc)

Steps:
1. Preheat the oven at 150 deg C.
2. Beat egg whites until soft peaks. Add in sugar and vinegar and continue beat until stiff.
3. Pile the mixture on a baking paper and shape into two squares (10cm x 10cm). Bake at 110 deg C for 1.5 hours (reduce temperature if the mixture turns dark)
4. Pipe whipped cream and place fruits onto the meringue.

Done! now you are ready to serve...

Baked Cheesecake

Ingredients:
2 blocks of Philadelphia Cream Cheese
2/3 cups of castor sugar
4 eggs
1 tsp of vanilla extract
1 tsp of corn flour
1 tbsp of yogurt
250g of biscuits (Marie or mcVitie's)
100g of butter

Steps:
1. Crush biscuits in food processor and press crumbs on the base of baking tray. Place in fridge whiling preparing the filling.
2. Preheat oven to 180 deg C. Beat cream cheese, sugar and corn flour until smooth. Add eggs, one at a time, beat well. Fold in butter, vanilla extract and yogurt.
3. Pour mixture into the chilled base and bake for 45 minutes or until just firm to the touch.

Egg Tarts with Caramel

Ingredients:
1 sheet of frozen prerolled puff pastry
125g of creme fraiche
1 egg
1 tsp of vanilla extract
1 orange
5 tbsp of castor sugar
Ground cinnamon

Steps:
1. Sprinkle ground cinnamon over the pastry sheet, roll it and cut into 6 pieces. Put them in muffin tin and press to mould the pastry into the holes. Bake at 200 deg C for 10 minutes.
2. Combine creme fraiche, 1 tbsp castor sugar, vannila extract, orange zest and egg into a bowl. Mix well.
3. Take the muffin tin out of the oven, spoon the creme fraiche mixture into the tart cases, and return to the oven for 8 mins.
4. Squeeze orange juice into a small heated pan and add in the remaining castor sugar. Stir a few times till the mixture is caramelized. Spool some caramel over each tarts and put aside to set.
