Baked Chicken Leg

Ingredients:
1 chicken leg
1 clove of garlic, chopped
A pinch of salt, black pepper, cumin, oregano, chili flakes.
1 tbsp of olive oil
1/4 cup of chicken stock

Steps:
1. Preheat oven at 200 degree C.
2. Clean the chicken and pat dry.
3. Mix olive oil, garlic, salt, pepper, cumin, oregano, chili flakes in a small bowl.
4. Pat and spread the mixture over the chicken leg. Place the chicken in a baking tray and add in the stock.
5. Bake for 40 minutes.

Done! now you are ready to serve...

Pan-fried Salmon

Ingredients:
1 piece of salmon (with skin)
1 tsp of butter
Salt and pepper
80g of long beans, cut and steamed
1 tbsp of almond flakes

Steps:
1. Season salmon with salt and pepper.
2. Melt butter in heated pan and fry the salmon (skin side) till crispy. Turn to other sides (a few seconds each) till salmon is seen cooked. Transfer salmon to serving plate.
3. Add almond flakes to pan and fry them till golden brown with the butter left in pan. Add in steamed cut long beans and toss well.

Baked Frittata

Ingredients:
2 slices of chicken ham, cut
Some mushrooms, cut
6 tbsp of shredded cheddar cheese
3 eggs (whole)
2 egg whites
1 tbsp of milk (can be replaced with soy milk)
Minced chives
A pinch of salt and pepper

Steps:
1. Preheat oven at 180 degree C.
2. Place cut ham and mushroom evenly into 6 muffin tins. Sprinkle 1 tbsp of cheese into each muffin tins and set aside.
2. Beat eggs in a bowl and add in the remaining ingredients. Pour the egg mixture into each muffin tin till 3/4 full.
3. Bake for 25 minutes.

Coffee Panna Cotta

Ingredients:
1/4 cup of milk
1 tsp of gelatin
3/4 cup of whipping cream
1 tsp of coffee powder
1/8 cup of sugar

Steps:
1. Soak gelatin in milk for 3 minutes and bring the mixture to low heat till gelatin dissolves.
2. Add in the remaining ingredients and stir over medium heat till sugar dissolves. Remove from heat and cool it down for 5 minutes.
3. Pour into silicon mold or ramekins and refrigerate for 4 hours or overnight.

Pilau Rice

Ingredients:
2 cloves of garlic, chopped
Half of a small onion, chopped
8 pcs of Cardamom pods
1 Cinnamon stick
2 tsp of Cumin
10 pcs of Cloves
2 cups of Basmati Rice
A small cube of butter
2 cups of chicken stock
1 cup of coconut milk
Some sultanas and cashews

Steps:
1. Heat butter in pan and fry the garlic and onion till golden brown. Add in all spices and cook it for 2 minutes.
2. Add in the rice and stir it gently over low heat.
3. Cook it with the remaining ingredients in a rice cooker.

Tiramisu Cups

Ingredients:
Thin layer (1-2cm) of sponge cake (coffee flavored)
1 block of Philadelphia cream cheese
1/3 cup of sugar
1 cup of whipping cream
2 tbsp of coffee liqueur (Tia Maria or Kahlua)
Coffee
Cocoa powder

Steps:
1. Beat cream cheese with sugar in a large bowl till smooth. Stir in whipped cream and liqueur. Put in a piping bag and set aside.
2. Place a thin layer of sponge cake into a cup, spray some coffee on the layer surface, and pipe in a thin layer (same thickness as the sponge) of cream cheese mixture on top of it. Repeat this step for second layer. Chill for 4 hours or overnight.
3. Dust with cocoa powder before serving.

Scones

Ingredients:
1 cup of whipping cream
1 cup of lemonade
3 cups of self raising flour, sieved

Steps:
1. Preheat oven at 200 degree C.
2. Mix whipping cream and lemonade in a bowl, set aside.
2. Place the sieved flour in a separate bowl, add in slowly the lemonade mixture and fold well. Add in currents or sultanas as you wish.
3. Spoon the dough onto a baking tray, about 3 cm thick. Bake for 12 minutes or until pale golden.
4. Serve with strawberry jam and whipped cream.

Smoked Salmon & Mushroom Spaghetti

Ingredients:
1 clove of garlic, chopped
1 piece of fresh mushroom, sliced
5 tbsp of olive oil
3 thin slicers of smoked salmon
Some avocado, cut in pieces
Spaghetti (for 1 person), cooked
Salt, pepper and parsley

Steps:
1. Heat 1/2 tbsp of olive oil in pan and fry the garlic till golden brown. Add in sliced mushroom and cook it gently till soft.
2. Add in the remaining olive oil and spaghetti over low heat. Toss to combine well. Season with salt, pepper and parsley.
3. Serve with smoked salmon and avocado.

Teriyaki Salmon

Ingredients:
Salmon
Teriyaki sauce
Black pepper

Steps:
1. Marinate the salmon with teriyaki sauce and pepper for about 10 minutes.
2. Heat up the pan and sizzle the marinated salmon. Turn once. Sprinkle some pepper over it.

Plain Cold Soba

Ingredients:
Soba noodle
A bowl of ice water
5 tbsp of Tsuyu, diluted

Steps:
1. Cook the soba noodle in boiling water till soft (approximately 4 mins).
2. Rinse the cooked soba in cold water at least twice.
3. Serve cold soba with Tsuyu and any dishes of your choice like Teriyaki Beef, Katsu or Salmon (refer to Teriyaki Salmon ).

Pan-fried Steak

Ingredients:
Scotch fillets
Black pepper, olive oil and sea salt
A cube of butter
A clove of garlic
2 tbsp of lemon juice

Steps:
1. Season the fillet with pepper, salt and brush it with olive oil.
2. Heat up the pan for 5 minutes to ensure that the pan is hot enough for the meat to sizzle.
3. Cook one side till the side of the fillet is seen cooked. Turn the fillet and brush it with garlic and butter. Cook it till desired degree of doneness.
4. Rest the steak on a plate for 3 minutes after cooking.
5. Shift the steak to serving plate, put the juices back to pan to cook and add in lemon juice to make sauce.
6. Pour the sauce over the steak.

Cheese Baked Potatoes

Ingredients:
5 baby potatoes
2 tbsp of milk or cream
30g of butter
Salt and pepper to taste
Shredded cheese (of your choice)
Parsley

Steps:
1. Boil or microwave potatoes till soft. Remove the skin and press or mash them with a fork.
2. Bring the mashed potatoes to slow fire and add butter and milk. Stir to mix well. Add salt and pepper to taste.
3. Spoon the potatoes into bowl shaped aluminum foils. Sprinkle with cheese and bake in oven at 200 deg C for 15 mins or till golden brown.
4. Garnish with parsley.

Chilli Garlic Prawn

Ingredients:
5 prawns, peeled
2 cloves of garlic, chopped
1 tbsp of garlic butter (refer to Garlic Butter)
Parsley and chilli flakes

Steps:
1. Melt the garlic butter in pan and fry the garlic till golden brown.  Add in the prawns and cook well.
2. Add parsley and chilli flakes.

Sushi Rice

Ingredients:
1 cup of Japanese rice, cooked
2 tbsp of rice vinegar
1.5 tbsp of sugar
Salt (a pinch)

Steps:
1. Heat vinegar and sugar till sugar dissolved. Put aside to cool.
2. Pour the mixture into the cooked hot rice, gently fold in to combine them. Fan the rice until rice is cool.

*Ready rice can be used for hand rolls (the easiest) and sushi rolls.

Garlic Butter

Ingredients:
250g of salted butter, softened
2 cloves of garlic, chopped
Pepper and parsley

Steps:
1. Place all ingredients in a bowl and mixed them thoroughly.
2. Store in a container and place in the refrigerator.

Pavlova

Ingredients:
2 egg whites
110g of castor sugar
1/2 tsp of vinegar
120g of fresh whipping cream
Fresh fruits (strawberries, kiwi and etc)

Steps:
1. Preheat the oven at 150 deg C.
2. Beat egg whites until soft peaks. Add in sugar and vinegar and continue beat until stiff.
3. Pile the mixture on a baking paper and shape into two squares (10cm x 10cm). Bake at 110 deg C for 1.5 hours (reduce temperature if the mixture turns dark)
4. Pipe whipped cream and place fruits onto the meringue.

Creamy Mushroom Soup

Ingredients:
1 small onion, chopped
50g of butter
250g of fresh mushrooms, sliced
50g of plain flour
500ml of chicken stock
250ml of milk
Salt, pepper and parsley

Steps:
1. Melt butter in a pan and fry onions gently. Add mushrooms and cook gently until soft. Stir in the flour and cook for about 1 minute. Remove from heat and stir in the chicken stock.
2. Bring the mixture to boil, until the soup is thick. Stir in the milk. Season with salt and pepper, and simmer for 25 minutes.
3. Garnish with parsley.

Baked Cheesecake

Ingredients:
2 blocks of Philadelphia Cream Cheese
2/3 cups of castor sugar
4 eggs
1 tsp of vanilla extract
1 tsp of corn flour
1 tbsp of yogurt
250g of biscuits (Marie or mcVitie's)
100g of butter

Steps:
1. Crush biscuits in food processor and press crumbs on the base of baking tray. Place in fridge whiling preparing the filling.
2. Preheat oven to 180 deg C. Beat cream cheese, sugar and corn flour until smooth. Add eggs, one at a time, beat well. Fold in butter, vanilla extract and yogurt.
3. Pour mixture into the chilled base and bake for 45 minutes or until just firm to the touch.

Egg Tarts with Caramel

Ingredients:
1 sheet of frozen prerolled puff pastry
125g of creme fraiche
1 egg
1 tsp of vanilla extract
1 orange
5 tbsp of castor sugar
Ground cinnamon

Steps:
1. Sprinkle ground cinnamon over the pastry sheet, roll it and cut into 6 pieces. Put them in muffin tin and press to mould the pastry into the holes. Bake at 200 deg C for 10 minutes.
2. Combine creme fraiche, 1 tbsp castor sugar, vannila extract, orange zest and egg into a bowl. Mix well.
3. Take the muffin tin out of the oven, spoon the creme fraiche mixture into the tart cases, and return to the oven for 8 mins.
4. Squeeze orange juice into a small heated pan and add in the remaining castor sugar. Stir a few times till the mixture is caramelized. Spool some caramel over each tarts and put aside to set.
